Conceptually , ignoring backlash.
If I increase the no of teeth on the X,Y drive GT2 belt (these have 20 and 36 teeth currently ?).
I have seen some 60 teeth version with a 5mm and 8mm bore.

Theoretically would this improve accuracy ? at the expense of speed of course.

Or its only theoretical and in practice doesn't help ?

Both x and y are currently 20 teeth, which gives 40mm per revolution. If you increase the tooth count, more belt is moved per rev. A 60 teeth pulley would give 120mm travel per revolution, three times the speed with the cost of accuracy, assuming that the motor torque would not be the limiting factor.

If you want to increase accuracy, you need to make the machine move less per motor revolution. With belt drive, you could get 16 teeth pulley for x; for y, the current drive shaft design makes 20 teeth the smallest pulley that can be used. I doubt that the 16/20 on x would not be significant.
